This small outlet serves 21 varieties of puttu

For most Keralites, the traditional breakfast of puttu has to be served with kadala (chickpeas), bananna or papad. I am surprised when Muthu challenges me that no accompaniment is required for the puttu he serves.

Muthu runs Putlur Angalamman Puttu Kadai, a small puttu shop, from a pushcart in Chintadripet. The types of puttu he makes has now gained a following among foodies.

“Our puttu is easy to digest,” says Muthu who has been running the outlet with his wife Kannani for the last seven years.

The secret lies in the preparation, he says. “We soak the rice, dry it and pound it; it’s an elaborate process,” he says, adding that cardamon, coconut and sugar are added before it is steamed.
