Burnt pineapple salad with sweet and sour dressing


? Pineapple slices: 6

? Brown sugar: 1 tbsp

? Rock salt: 1 tsp

? Thai sweet sour sauce

? Rocket leaves: 2 cups

? Mixed nuts: 2 tbsp



? Place the pineapple slices in a pan and heat on low fire till slightly smoked to burnt

? In a separate pan, heat sugar till caramalised

? Add nuts and seasoning, stir for a minute and remove

? Let it cool and crystalise

? Crush the crystalised nuts and set aside for garnishing

? In a serving bowl, place the washed rocket leaves and drizzle the sauce over it

? Mix gently and add the burnt pineapple pieces, and garnish with caramelised nuts
